In a large pot, bring water to a boil and add the collard greens. Blanch them for about 5 minutes until they are slightly tender. Drain and set aside.
In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3 to 5 minutes.
Add the ground turkey to the skillet and cook until browned, about 7 to 10 minutes. Make sure to break it apart while cooking.
