Tacos de Lechuga are a fresh and low-carb twist on your favorite taco night; indulge without the guilt tonight!
Begin by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3 minutes until softened.
Next, add the ground beef to the skillet. Cook for about 5-7 minutes, breaking it apart with a spatula until it's browned and fully cooked.
Stir in 2 tablespoons of taco seasoning and mix well. If needed, add a couple of tablespoons of water to help incorporate the seasoning. Let it simmer for 3 minutes.
While the beef is cooking, wash the lettuce head and carefully separate the leaves, creating bowls for your tacos. Set them aside.
Dice the tomatoes and chop the cilantro for garnish. Keep them handy for assembly.
Once the beef is ready, remove the skillet from heat. Fill each lettuce leaf with a scoop of the beef mixture, a couple of dices of tomato, sprinkle some cheese and a dollop of sour cream.
Top each taco with fresh cilantro for that extra burst of flavor.
