Taco Quinoa is a deliciously easy way to enjoy a healthy twist on classic tacos, packed with protein and flavor!
Rinse the quinoa under cold water for about 1 minute. This helps remove any bitterness from the quinoa.
In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil.
Once boiling, reduce heat, cover, and let it simmer for about 15 minutes or until all the water is absorbed. Remove from heat and fluff with a fork.
While the quinoa cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Chop the onion, bell pepper, and garlic, then add them to the skillet. Sauté for about 5 minutes until the vegetables are tender.
Drain and rinse the black beans and corn, then add them to the skillet along with the cooked quinoa.
Stir in 1 tablespoon of chili powder, 1 teaspoon of cumin, and salt to taste. Cook for an additional 5 minutes, stirring occasionally.
Finally, stir in chopped cilantro and the juice of one lime. Cook for another minute until heated through. Serve warm.
