This vibrant stir-fry is a delicious way to bring some color and nutrition to your dinner table tonight!
Begin by peeling and dicing the potatoes into small cubes. Place them in a pot of boiling water and cook for about 10 minutes until slightly tender. Then, drain and set aside.
While the potatoes are cooking, wash and slice the bell peppers into strips. Mince the garlic, and chop the green onions.
In a large skillet or wok, heat the vegetable oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
