Start by bringing a large pot of salted water to a boil. Add 250 grams of rotini and cook for about 8-10 minutes, or until al dente, stirring occasionally.
While the pasta is cooking, prepare the broccoli by cutting it into small florets. In the last 3 minutes of the pasta cooking time, add 200 grams of broccoli to the pot with the pasta.
Once the rotini and broccoli are cooked, drain them and set aside.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 minced garlic cloves and sauté for 1-2 minutes until fragrant.
Add the drained pasta and broccoli to the skillet, tossing to combine with the garlic and oil.
Reduce the heat to low, then crumble 150 grams of goat cheese over the pasta. Stir gently until the cheese begins to melt and coat the pasta, about 2-3 minutes.
Season with 1 teaspoon of salt and 1 teaspoon of black pepper, adjusting to taste.
Serve hot, garnished with 50 grams of grated parmesan cheese on top if desired.
