Bring a burst of sweetness to your dinner plate with this unique and delicious twist on traditional pasta!
Begin by boiling a pot of salted water. Once the water is boiling, add 200 grams of pasta and cook according to package instructions, typically about 10-12 minutes, until al dente.
While the pasta cooks, prepare the raspberry sauce. In a small saucepan over medium heat, add 150 grams of raspberries, 2 tablespoons of olive oil, 1 tablespoon of honey, and 1 tablespoon of lemon juice.
Cook the raspberry mixture for about 5-7 minutes, mashing the raspberries gently with a fork to create a sauce. Allow it to simmer until it thickens slightly.
Once the pasta is cooked, drain it and reserve a bit of the pasta water.
Combine the pasta with the raspberry sauce. If the sauce is too thick, add a splash of the reserved pasta water to achieve your desired consistency.
Season with salt and pepper to taste, then stir to combine.
Serve warm and garnish with freshly grated parmesan cheese on top.
