Start by soaking the cannellini beans in water overnight or for at least 8 hours. After soaking, drain and rinse them.
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, and sauté for about 5 minutes until soft.
Add the minced garlic, chopped carrot, and chopped celery to the pot. Cook for an additional 5 minutes until all vegetables are tender.
Add the ground beef to the pot, stirring well to combine. Cook until browned, about 7-10 minutes.
Once the beef is browned, add the soaked cannellini beans, bay leaf, and enough water to cover the beans by about an inch. Bring to a boil.
Reduce the heat to a simmer, cover the pot, and let it cook for about 30 minutes or until the beans are tender.
Season with salt and black pepper to taste. Remove the bay leaf before serving.
