Start by preparing your chicken pieces. Rinse them under cold water and pat them dry with paper towels.
In a large pot, combine 1/2 cup soy sauce, 1 cup water, and 2 tablespoons sugar, stirring until the sugar dissolves. Bring the mixture to a gentle boil over medium heat.
While waiting, mince 4 cloves of garlic and grate 1 inch of ginger. Add both to the pot once boiling.
Introduce the chicken pieces into the pot, ensuring that they are submerged in the sauce. Allow the mixture to return to a boil.
Once boiling, reduce the heat to low and cover the pot. Let it simmer for 30 minutes, stirring occasionally to prevent sticking.
Chop 2 stalks of green onions and add them to the pot along with 2 teaspoons of sesame oil and 1 teaspoon of black pepper. Stir well.
Continue to simmer uncovered for another 15 minutes to allow the sauce to thicken and the flavors to meld.
