Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
While the oven is heating up, peel and cut the potatoes into chunks. Think about a size that will cook through nicely in about 45 minutes.
In a large bowl, combine the chicken pieces with the potatoes, chopped red bell pepper, diced onion, crushed garlic, olive oil, oregano, salt, and black pepper. Squeeze the juice of the lemon into the mixture and toss it all together until everything is well-coated. This will bring out the Mediterranean flavors beautifully.
Transfer the mixture to a large baking dish, spreading it evenly.
Cover the baking dish with aluminum foil and bake it in the preheated oven for 30 minutes. This will help to lock in all the juices and flavors.
