Start by boiling a large pot of salted water over medium-high heat. Once boiling, add 250 grams of fettuccine and cook according to the package instructions until al dente, usually around 8-10 minutes.
While the pasta is cooking, in a separate pan, melt 30 grams of butter over medium heat.
Add 2 cloves of minced garlic to the melted butter and sauté for about 1-2 minutes, until fragrant but not browned.
Pour in 100 milliliters of buffalo sauce and let it simmer for about 2 minutes.
Next, add 100 milliliters of heavy cream to the sauce, stirring continuously to combine. Let it simmer for another 2-3 minutes until slightly thickened.
Once the fettuccine is cooked, reserve a cup of pasta water and then drain the pasta.
Add the drained pasta to the sauce and toss to coat thoroughly. If the sauce is too thick, add a little reserved pasta water until you reach the desired creaminess.
Incorporate 50 grams of grated parmesan cheese into the pasta and season with salt and pepper to taste. Mix well.
Serve hot, garnished with additional parmesan cheese if desired.
