Start by draining the tofu and wrapping it in a clean kitchen towel. Place a weight on top to press out excess moisture for about 15 minutes.
While the tofu is pressing, prepare the dashi. If using instant dashi, dissolve it in 500 milliliters of hot water as per package instructions and let it cool.
Once the tofu is pressed, cut it into 1-inch cubes. In a separate bowl, add cornstarch and coat each tofu piece evenly on all sides to create a crispy crust.
Heat the vegetable oil in a deep pan over medium-high heat until hot. Carefully add the tofu cubes and fry them in batches until they are golden brown and crispy, about 2-3 minutes per side. Remove them from the oil and drain on paper towels.
In a small saucepan, heat the prepared dashi over medium heat. Stir in the soy sauce and mirin, simmering for about 5 minutes. This will be your savory sauce.
