Ebi Chahan is a delicious and quick way to enjoy a taste of Japan in your own home tonight!
Start by cooking the rice. Rinse 2 cups of Japanese rice under cold water until the water runs clear. Cook according to your rice cooker or use the stovetop method, following the package instructions. Usually, it takes about 20 minutes to cook. Allow the rice to cool.
While the rice is cooking, prepare the vegetables. Dice 1 onion, chop 2 stalks of green onion, and grate 1 carrot.
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the diced onion and grated carrot. Sauté for about 3 minutes until they soften.
Next, add 200 grams of shrimp into the skillet. Cook until they turn pink and are fully cooked, which should take around 5 minutes.
Stir in the cooked rice, 1 cup of peas, 3 tablespoons of soy sauce, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix everything well and let it cook together for another 5 minutes, allowing the flavors to meld.
