To start, heat a large skillet over medium heat and add 1 pound of ground turkey. Cook it, breaking it apart, for about 5-7 minutes until it’s browned.
While the turkey is cooking, finely chop 1 cup of shiitake mushrooms, 1 bell pepper, 1 carrot, and 3 stalks of green onion.
Once the turkey is browned, add the chopped vegetables to the skillet and stir well. Let them cook together for about 5-7 minutes until the veggies are tender.
Next, add 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of ginger, and 2 minced cloves of garlic to the skillet. Stir everything together and let it simmer for 2-3 minutes.
While the filling is simmering, wash and separate the leaves from 1 head of lettuce.
Serve the filling in the lettuce leaves as wraps. Enjoy immediately!
