It's a quick and savory way to satisfy your cravings with cheesy, melty goodness wrapped around perfectly seasoned chicken.
Start by preheating your skillet over medium heat.
In a bowl, season the chicken with your favorite spices. You can use cumin, paprika, salt, and pepper for an extra kick.
Add 1 tablespoon of olive oil to the skillet, then add the chicken. Cook for about 6 to 7 minutes on each side, or until fully cooked through and no longer pink.
While the chicken cooks, chop the bell pepper and onion into thin slices.
Once the chicken is done, remove it from the skillet and let it rest for a few minutes. Then, slice it into strips.
In the same skillet, add another tablespoon of olive oil, then add the sliced onion and bell pepper. Sauté them for about 5 minutes until they are soft and slightly caramelized.
Now, it’s time to assemble the quesadillas. Place a tortilla on the skillet and layer half of it with cheese, followed by a portion of chicken, sautéed onion, and bell pepper. Top with more cheese and fold the tortilla over.
Cook the quesadilla for about 3 to 4 minutes, flipping halfway through until both sides are golden and the cheese is melted.
Once cooked, remove from skillet and let it cool for a minute. Cut into wedges.
Serve with salsa on the side for dipping.
