Start by heating 2 tablespoons of olive oil in a skillet over medium heat.
Once the oil is hot, add 1 pound of chicken (cut into strips) to the skillet.
Cook the chicken for about 5-7 minutes until it is fully cooked and no longer pink. Stir occasionally to ensure even cooking.
While the chicken is cooking, chop the bell pepper and onion into small pieces.
After the chicken is cooked, add the chopped bell pepper and onion to the skillet.
Stir in 1 teaspoon of salt and 1 teaspoon of pepper and cook for an additional 3-4 minutes, until the vegetables are tender.
Remove the skillet from heat and set aside.
Take one tortilla and layer with a quarter of the chicken and vegetable mixture and top with 1/4 cup of cheese.
Fold the tortilla in half and place it in a clean skillet over low heat.
Cook each side of the wrap for about 2-3 minutes or until the cheese is melted and the tortilla is golden brown.
Repeat the process with the remaining tortillas and filling.
Serve the wraps warm, and if desired, you can add salsa or guacamole on the side.
