Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add one chopped onion and sauté for about 5 minutes until translucent.
Add 2 minced garlic cloves and 1 pound of ground turkey to the skillet. Cook for about 7-10 minutes until the turkey is no longer pink.
Stir in 1 teaspoon of cumin, and a can of drained black beans. Pour in the enchilada sauce and let it simmer for 5 minutes, stirring occasionally.
