Begin by rinsing the 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring it to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 15 minutes until all the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
While the quinoa is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 pound of diced beef and season it with 1 teaspoon of salt, 1 teaspoon of pepper, and 1 teaspoon of cumin. Stir-fry the beef for about 5-7 minutes until browned and cooked through.
Chop 1 jalapeño and 0.5 piece of red onion. Once the beef is cooked, add the jalapeño and onion to the skillet. Cook for an additional 3-5 minutes until the vegetables are tender.
Lastly, stir in 1 can of black beans and 1 cup of corn to the beef mixture. Cook for another 2-3 minutes until heated through.
To serve, fluff the cooked quinoa with a fork and divide it into bowls. Top with the beef mixture, and garnish with fresh cilantro, lime juice from 1 piece of lime, and additional salt and pepper to taste.
