Prepare the teriyaki sauce: In a small saucepan over medium heat, combine 3 tablespoons of soy sauce, 2 tablespoons of mirin, 1 tablespoon of sugar, and the finely grated ginger clove. Stir until the sugar dissolves, then reduce the heat to low and let it simmer for about 5 minutes to thicken slightly.
While the sauce simmers, preheat your grill or grill pan over medium-high heat.
Once the grill is hot, season the mackerel pieces with a little salt on both sides.
Place the mackerel on the grill skin-side down. Grill for about 4-5 minutes, then brush a generous amount of the teriyaki sauce over the top.
