Gradually add the chicken broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. This process should take about 18-20 minutes until the rice is al dente.
While the risotto is cooking, in a separate pan, melt the butter over medium heat and add the shrimp. Cook for about 3-4 minutes until the shrimp turns pink. Season with salt and black pepper.
Once the risotto is creamy and cooked, stir in the Parmesan cheese and cooked shrimp. Mix thoroughly and let it sit for a minute.
Garnish with freshly chopped parsley, and adjust seasoning if needed before serving.
