Pasta e Latte is the warm, comforting hug your weeknight meals have been missing!
Begin by bringing a pot of salted water to a boil. Add the 200 grams of pasta and cook according to the package instructions until al dente, usually around 8 to 10 minutes.
While the pasta cooks, in a separate saucepan, heat the 500 milliliters of milk over medium-low heat. Stir occasionally to prevent it from scalding.
Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it to the saucepan with the warm milk.
Stir in the 30 grams of butter until melted, followed by the 50 grams of grated parmesan cheese. Mix gently until the cheese has melted and the pasta is well-coated.
If the mixture seems too thick, add a little reserved pasta water to reach your desired consistency.
Season with 1 teaspoon of salt and 1 teaspoon of pepper to taste, stirring well to combine.
Serve immediately, garnishing with extra parmesan cheese if desired.
