Start by boiling 4 cups of chicken broth in a pot and add the whole piece of chicken. Let it simmer for about 30 minutes until the chicken is cooked through.
While the chicken is cooking, prepare the rice. Rinse 2 cups of rice a few times under cold water until the water runs clear, then drain.
In another pot, heat a tablespoon of oil and sauté 4 minced garlic cloves until golden.
Add the rinsed rice into the pot with garlic and stir for a minute, ensuring the rice is well-coated with oil.
Pour in 4 cups of the chicken broth (from the pot with chicken) into the rice and bring it to a boil. Once it boils, cover and reduce the heat to low, letting it simmer for around 15 minutes.
Once the chicken is cooked, remove it from the pot and let it rest for a few minutes before slicing it.
Prepare the sauce by mixing 3 tablespoons of soy sauce, 1 teaspoon of sugar, and a pinch of salt together.
Slice the cucumber and lime for garnish.
Serve the chicken on a bed of rice with the sauce drizzled over it and garnish with cucumber slices and lime wedges.
