    Start by preparing the dashi. If you are using instant dashi granules, dissolve them in 4 cups of water in a pot over medium heat. If using kombu and katsuobushi, soak 15 grams of kombu in 4 cups of water for 30 minutes, then bring to a boil, remove the kombu, and add 15 grams of katsuobushi. Let it simmer for 5 minutes before straining.

    Once your dashi is ready, add 3 tablespoons of soy sauce and 2 tablespoons of mirin to the pot.

    Stir in 1 tablespoon of sugar, mixing well until it dissolves.

    Slice the green onions and add them to the pot.

    In another pot, heat some water and add the tofu, cooking for about 3 minutes until warmed through.

    Remove the tofu and slice it into bite-sized pieces before adding it to the dashi mixture.

    Slice the shiitake mushrooms and add them to the pot as well, cooking for about 5 minutes until tender.
