Start by chopping the zucchini, potato, mushrooms, and tofu into bite-sized cubes. Set them aside.
In a pot, add 4 cups of water and bring it to a boil over medium-high heat.
Once the water is boiling, add 3 tablespoons of doenjang, stirring well to dissolve it.
Add the garlic cloves, roughly chopped, and the potato cubes first, letting them simmer for about 10 minutes until they start to soften.
Next, add the zucchini, mushrooms, and tofu to the pot, letting it all cook together for another 10-15 minutes.
During the last few minutes of cooking, add chopped green onion for flavor.
Taste and adjust seasoning as needed. If you want it spicier, you can add some red pepper flakes.
Serve hot, ideally with a side of rice.
