Begin by heating 2 tablespoons of olive oil in a large skillet over medium-high heat.

In the same skillet, add minced garlic and sauté for about 1 minute or until fragrant.
Pour in 1 cup of heavy cream, stirring well. Allow it to simmer for about 3-4 minutes until the sauce has thickened slightly.
Add 3 cups of spinach to the sauce, stirring until wilted, about 2-3 minutes.
Return the cooked chicken to the skillet and sprinkle 1 cup of parmesan cheese over the top. Stir to coat everything in the creamy sauce. Cook for an additional 2 minutes to heat through.
