In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 onion, chopped, and sauté it for about 2-3 minutes until softened.
Add 2 stalks of celery and 1 carrot, both chopped, and continue to sauté for another 5 minutes.
Stir in 3 cloves of minced garlic and cook for an additional minute until fragrant.
Add 6 cups of chicken broth and 2 pounds of chicken. Bring the mixture to a boil and then reduce the heat to a simmer.
Allow the chicken to cook in the broth for approximately 15-20 minutes until fully cooked.
Once the chicken is cooked, remove it from the pot, shred it, and return it to the soup.
Add 8 ounces of noodles to the broth, along with your desired herbs, salt, and pepper. Cook for another 5-7 minutes until the noodles are tender.
Taste and adjust seasonings as necessary. Serve hot.
