Chole Masala is comforting, flavorful, and perfect for any weeknight dinner!
Start by soaking the chickpeas overnight in a bowl filled with water to cover them. The next day, rinse and drain.
Heat oil in a large pan over medium heat. Add chopped onions and sauté for about 5 to 7 minutes until golden brown.
Add minced ginger and garlic, and cook for another 2 minutes until fragrant.
Stir in the chopped tomatoes and green chili, cooking for about 5 to 8 minutes until the tomatoes break down.
Add cumin powder, coriander powder, turmeric powder, and salt. Cook for 2 minutes, mixing well.
Incorporate the soaked chickpeas into the mixture and pour in 2 cups of water. Bring to a boil, then lower the heat and simmer for about 20 minutes until the chickpeas are tender and the sauce thickens.
Sprinkle garam masala into the curry, stir, and let it cook for an additional 5 minutes.
Garnish with chopped cilantro before serving.
