Preheat your oven to 180°C (350°F). This helps to create a nice golden top on your bake.
Begin by peeling and dicing the potatoes into small cubes. This allows them to cook evenly in the bake.
Slice the zucchini, bell pepper, and carrots into bite-sized pieces.
Cut the broccoli into small florets to ensure they mix well with the other vegetables.
In a large frying pan, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally until they're just tender.
Next, add the sliced zucchini, bell pepper, carrots, and broccoli to the pan. Sauté for an additional 5 minutes until the vegetables are slightly tender.
While the veggies are cooking, cook the bacon in a separate pan until crispy. Drain on paper towels and chop into pieces.
In a large mixing bowl, combine the sautéed vegetables, chopped bacon, cream, shredded cheddar cheese, salt, pepper, and minced garlic (crush the garlic before adding). Mix until everything is well coated.
Transfer the mixture to a greased baking dish, spreading it evenly.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the top is bubbly and golden brown.
