Start by heating the olive oil in a large skillet over medium heat. This should take about 1 to 2 minutes.
Add the diced onion and minced garlic, and sauté for about 3 to 4 minutes, until they are soft and translucent.
Now, add the ground beef to the skillet. Cook it for around 5 to 7 minutes, breaking it apart as it cooks, until it’s nicely browned.
In the meantime, slice the mushrooms. Once the beef is browned, stir in the mushrooms and season with salt and pepper. Cook for another 5 to 6 minutes until the mushrooms are tender.
Pour in the beef broth, stirring well to combine everything. Allow the mixture to simmer for 5 minutes.
Finally, sprinkle the cheddar cheese over the top, reduce the heat to low, cover the skillet, and let it cook for about 3 to 5 minutes or until the cheese is melted and bubbly.
As a garnish, chop some fresh parsley and sprinkle it over the skillet before serving.
