Start by rinsing 1 cup of quinoa under cold water to remove any bitterness. This only takes a minute.
In a medium saucepan, combine the quinoa and 2 cups of vegetable broth. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes until the quinoa is fluffy and all the broth is absorbed.
While the quinoa cooks, drain and rinse the can of chickpeas.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chickpeas, sprinkle with 1 teaspoon of salt and 1/2 teaspoon of pepper, and sauté for about 5-7 minutes until they are golden and slightly crispy.
Add in the 2 cups of spinach and stir for an additional 2-3 minutes until the spinach wilts.
Now, slice 1 avocado and set aside.
Once the quinoa is done cooking, fluff it with a fork and stir in the juice of 2 tablespoons of lemon juice.
To assemble, in a bowl, layer the quinoa, sautéed chickpeas with spinach, and top with sliced avocado and halved cherry tomatoes.
