Start by rinsing the rice under cold water until the water runs clear, approximately 1 to 2 minutes.
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat, add 1 chopped onion and sauté until soft, around 5 minutes.
Add 2 minced garlic cloves to the saucepan and cook for an additional minute until fragrant.
Pour in the 2 cups of vegetable broth and bring it to a boil. Once boiling, stir in the rinsed rice, reduce heat to low, cover, and simmer for 18 minutes or until the rice is tender and liquid is absorbed.
While the rice cooks, chop 2 tomatoes and set aside.
In a separate large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add chopped tomatoes, salt, and pepper, and cook for about 5 minutes until the tomatoes soften.
Once the rice is ready, add it to the skillet with the tomatoes. Mix well, then stir in 1 cup of shredded mozzarella cheese and chopped basil.
Cook for 2 to 3 minutes until the cheese is melted and everything is combined. Remove from heat.
Serve in bowls, garnished with additional basil and a sprinkle of cheese if desired.
