Begin by dicing the onion, carrot, and celery into small pieces. This should take about 10 minutes.
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrot, and celery to the pot. Sauté them for about 5 minutes or until they become slightly tender.
While the vegetables are cooking, peel and chop the potatoes into small cubes and dice the zucchini into pieces.
