Begin by rinsing 1 cup of quinoa under cold water to remove bitterness. Drain well.
In a pot, combine the rinsed quinoa with 2 cups of water and bring it to a boil.
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes until the quinoa is cooked and water is absorbed.
Meanwhile, chop 1 carrot, 1 onion, and 1 green chili.
In a separate pan, heat 2 tablespoons of oil over medium heat. Add 1 teaspoon of mustard seeds and let them splutter for a few seconds.
Next, add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the chopped carrot, peas (1 cup), and green chili. Stir well and cook for another 5 minutes, until vegetables are tender.
Add the cooked quinoa to the vegetable mixture, followed by curry leaves and salt to taste. Mix everything well and cook for an additional 2 minutes.
Finally, garnish with chopped coriander leaves and serve hot.
