Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the chopped bell pepper and onion. Sauté for about 3-4 minutes until they soften.
Add the chopped turkey to the skillet and stir well. Cook for an additional 2-3 minutes until heated through.
On a clean surface, place one tortilla and spread half of the cooked turkey and vegetable mixture evenly across it. Top with half of the cheese.
Cover with another tortilla. Allow to cook for about 2 minutes or until the bottom tortilla is golden brown.
Carefully flip the quesadilla using a spatula, and cook for another 2-3 minutes or until the cheese is melted and the second tortilla is golden brown.
