Begin by washing the spinach and kale under cold water. Shake off excess water and set them aside.
In a large skillet or wok, heat 2 tablespoons of olive oil over medium heat for about 1 minute until it shimmers.
Add 3 cloves of minced garlic to the skillet and sauté for 30 seconds until fragrant.
Next, add the kale to the skillet. Stir-fry for about 4 minutes until it starts to soften.
Add the spinach to the skillet and continue to stir-fry for another 3 minutes until both greens are tender and wilted.
In a separate small bowl, combine 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of red pepper flakes. Mix well.
Pour this sauce over the greens in the skillet and mix thoroughly for about 2 minutes to combine the flavors.
Finally, add 1 cup of walnuts to the skillet and toss everything together for an additional 2 minutes until walnuts are warm.
Season with salt and black pepper to taste and serve immediately.
