Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). This will allow for a crispy skin on the chicken.
While the oven is preheating, prepare the sweet potatoes. Peel them and cut them into roughly 1-inch cubes.
In a large bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer.
Now, prepare the chicken. In a small bowl, mix together the remaining tablespoon of olive oil, minced garlic, cumin, paprika, salt, and black pepper.
