Start by soaking the sweet potato starch noodles in hot water for about 30 minutes. This will soften them and prepare them for cooking.
While the noodles are soaking, prepare the vegetables. Julienne the carrot and bell pepper into thin strips, slice the onion, and dice the shiitake mushroom.
In a large frying pan or wok, heat 1 tablespoon of sesame oil over medium heat. Add the onion and sauté for 2-3 minutes until it becomes translucent.
Add the carrot, bell pepper, and shiitake mushroom to the pan. Cook for another 3-4 minutes until the vegetables are tender.
Add the minced garlic and sauté for an additional 1 minute until fragrant.
Once the noodles are softened, drain and rinse them under cold water. Add the noodles to the pan with the cooked vegetables.
In a small bowl, mix together the soy sauce, sugar, and remaining 1 tablespoon of sesame oil. Pour this sauce over the noodles and vegetables.
Toss everything together gently to combine all the flavors. Cook for another 2-3 minutes until heated through.
Towards the end of cooking, add the spinach and cook until wilted, about 1-2 minutes.
Remove from heat and sprinkle with sesame seeds and sliced green onions for garnish before serving.
