Treat yourself to a delicious journey of flavors with Gosht Biryani tonight!
Soak 3 cups of basmati rice in water for at least 30 minutes.
Heat 4 tablespoons of cooking oil in a large pot over medium heat.
Add 2 sliced onions and sauté them until golden brown, about 10-12 minutes.
Mix in 1 tablespoon of ginger and 4 cloves of minced garlic. Cook for 2-3 minutes more.
Add 500 grams of mutton to the pot and cook until it browns, about 10 minutes.
Add 2 chopped tomatoes, 1 cup of yogurt, and 3 tablespoons of biryani masala. Stir and cook for 5-7 minutes until the tomatoes soften.
Pour in 6 cups of water and add salt to taste. Bring the mixture to a boil.
Once it boils, reduce the heat and let it simmer for 1.5 hours until the mutton is tender.
In a separate pot, boil fresh water and add the soaked basmati rice along with bay leaves, cardamom, cloves, and cinnamon.
Cook the rice until it is about 70% done, which takes around 8-10 minutes. Drain the rice.
Once the mutton is cooked, layer half of the rice over the meat in the pot. Sprinkle some mint leaves, coriander leaves, and green chilies.
Top it with the remaining rice and add another layer of mint and coriander leaves.
Cover the pot with a tight lid and let it cook on low heat for another 20-25 minutes to allow the flavors to blend.
