Start by rinsing 1 cup of rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from being sticky.
In a large pot, heat 2 tablespoons of olive oil over medium heat. Once hot, add 1 chopped onion and cook for about 3 minutes until translucent.
Add in 2 cloves of minced garlic and cook for another minute until fragrant.
Next, stir in 1 diced carrot and 1 diced bell pepper. Cook for about 5 minutes, allowing the vegetables to soften.
Sprinkle in 1 teaspoon of cumin, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Give it a good stir.
Add in the rinsed rice and stir to coat the grains with the oil and spices. Then, pour in 2 cups of water and add 1 bay leaf.
