Start by boiling salted water in a large pot. Once boiling, add 8 ounces of pasta. Cook according to the package instructions until al dente, about 8-10 minutes.
While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 chopped onion and sauté for about 3-4 minutes until translucent.
Add 3 minced cloves of garlic to the skillet and sauté for another 1-2 minutes until fragrant.
Add 10 ounces of spinach to the skillet. Cook until the spinach wilts down, which should take around 4-5 minutes. Remove from heat and let cool slightly.
In a large mixing bowl, combine the spinach mixture, 1 cup of crumbled feta cheese, 1 beaten egg, 1 teaspoon of black pepper, 1 teaspoon of nutmeg, and 1/4 cup of chopped parsley. Stir until combined.
Drain the pasta and add it to the mixing bowl with the spinach mixture. Toss well to combine all ingredients.
