While the quinoa is cooking, heat a skillet over medium heat. Add a bit of oil and sauté 1 diced onion and finely chopped jalapeno for about 3-5 minutes until softened.
Stir in 1 cup of tomato sauce and the drained black beans. Season with salt and pepper to taste. Let it simmer for about 5 minutes.
Once everything is cooked, prepare the eggs. In the same skillet, crack 4 eggs and cook them sunny-side up or to your desired doneness.
To serve, fluff the cooked quinoa with a fork and place a generous scoop of the black bean mixture on top. Carefully add the fried eggs on top.
