These bite-sized quesadillas are a fun twist on classic flavors and perfect for quick meals or snacks!
Start by preheating your oven according to the fish stick package instructions; typically, this will be around 425 degrees Fahrenheit.
While the oven is heating, take the fish sticks and place them on a baking sheet. Bake for the recommended time, usually about 15 minutes, turning halfway through.
While the fish sticks are baking, in a mixing bowl, combine the cooked chicken, cheddar cheese, salt, and pepper. Mix well until everything is nicely incorporated.
Once the fish sticks are done, take them out of the oven and allow them to cool slightly. Then chop them into smaller pieces.
Now, take one flour tortilla and place it on a clean surface. Spread a few spoonfuls of the chicken and cheese mixture evenly over half of the tortilla, then add some of the chopped fish sticks on top.
Fold the tortilla in half over the filling. Repeat this process with the remaining tortillas and filling.
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the folded quesadilla to the skillet and cook for about 3-4 minutes until golden brown and crispy. Flip and cook the other side for another 3-4 minutes.
Once cooked, transfer the quesadilla to a cutting board and let it cool for a minute before slicing it into bite-sized pieces.
For the garnish, squeeze fresh lime juice over the quesadillas and serve with sour cream on the side.
