Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
Wash the bell peppers, slice the tops off, and remove the seeds. Set aside.
In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add diced onion and minced garlic, cooking until soft, about 5 minutes.
