Start by marinating the chicken: In a bowl, combine the juice of 1 lime, 1 tablespoon of olive oil, cumin, paprika, and salt to taste. Add the chicken breast and let it marinate for at least 15 minutes, but ideally 30 minutes.
While the chicken is marinating, prepare the jalapeno, onion, garlic, and cilantro. Dice the onion and jalapeno finely. Mince the garlic.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the marinated chicken pieces (after removing them from the marinade) to the skillet.
Cook the chicken for about 5 minutes on each side, or until the chicken is cooked through and has a nice golden brown color. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
In the same skillet, add the diced onion, jalapeno, and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.
Return the sliced chicken to the skillet, and toss everything together for another minute. Squeeze the juice of the remaining lime over the mix and stir in the chopped cilantro just before serving.
