Rinse 1 cup of lentils thoroughly under running water.
In a pot, add 4 cups of water and the rinsed lentils. Bring to a boil and then reduce to a simmer. Cook for about 15-20 minutes until lentils are soft.
While the lentils are cooking, heat 2 tablespoons of oil in a pan over medium heat.
Add 1 diced onion and sauté for about 5 minutes until golden brown.
Add 4 minced garlic cloves and 1-inch piece of grated ginger to the pan, cooking for an additional 2 minutes.
Stir in 1 diced tomato, 1 teaspoon turmeric, 1 teaspoon cumin, and 1 teaspoon coriander. Cook for 5 more minutes until tomatoes are mushy.
Add 2 cups of fresh spinach to the mixture and cook until wilted, about 3 minutes.
Once the lentils are cooked, combine them with the spinach mixture, add salt to taste, and stir well.
Let it simmer together for another 5 minutes before serving.
Serve hot with rice or bread, and enjoy!
