Begin by rinsing the whole chicken under cold water until it runs clear.
In a large pot, add 3 liters of cold water and the rinsed chicken. Place it on the stove over medium heat.
As the water starts to heat up, add 1 piece of ginger (lightly smashed), 5 cloves of garlic (smashed), 1 whole onion (peeled and halved), and 1 carrot (cut in half).
Allow the broth to come to a boil, then reduce the heat to low to simmer. Skim off any foam that rises to the top during the first 15 minutes of cooking.
Let the broth simmer for about 1.5 hours. You want the chicken to be fully cooked and tender.
Once the chicken is done, remove it from the pot and set it aside to cool slightly. Strain the broth through a fine sieve into another large pot to remove the solids.
Return the broth to the stove and add 3 tablespoons of fish sauce, 1 teaspoon of salt, and 1 teaspoon of black pepper to taste.
Shred the chicken into bite-sized pieces, removing the skin and bones. Return the shredded chicken to the broth.
Finely chop 2 stalks of green onion and sprinkle them over the broth just before serving.
Serve the broth hot in bowls.
