These Empanadas de Carne are the perfect comfort food, wrapping a savory, spiced filling in a flaky crust that will impress your family and friends!
In a large pan, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion, 2 minced garlic cloves, and 1 diced bell pepper. Sauté for about 5 minutes until the vegetables are soft.
Add 1 pound of ground beef to the pan, breaking it up with a spoon. Season with 1 teaspoon of cumin, 1 teaspoon of paprika, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Cook until the beef is browned, about 10 minutes.
Once the beef is cooked, stir in 1/4 cup of chopped parsley and remove from heat. Allow the filling to cool for about 10 minutes.
Preheat your oven to 400°F (200°C).
Roll out the pastry dough on a lightly floured surface and cut into circles, about 4 inches in diameter.
