Rinse 1 cup of white rice under cold water until the water runs clear. In a medium pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 18 minutes until the rice is tender and water is absorbed.
While the rice cooks, chop 1 pound of chicken breast into bite-sized pieces. Mince 2 cloves of garlic and 1 clove of ginger. Set aside.
